As I grew up with Bengali and Brahmin community and most of my childhood friends are either bengali or tambrahm, I’m quite comfortable with both their cuisines.

The only thing that irked my senses with regard to the bong recipes was the aroma of mustard oil. I fought hard to fall in love with the pungent aroma of the oil and failed at all my attempts.

Though I loved this Bhaja muger dal along with baigan bhaja or aloo bhaja when I was served this at lunch, I felt that I would have liked it even more if I some other oil was used.

My mom used to make this often at home using the regular sunflower or groundnut oil and I always felt that something was lacking and used to complain that it doesn’t taste like “Sen” aunty’s muger dal.

As a kid, little did I know at that time that the oil made that difference.

Even during all these years, I refused to try the mustard oil in my cooking until very recently.

Usually, the moong dal is either roasted in ghee or mustard oil before cooking, to bring out a nuttier taste but I just dry roasted it.

Though pressure cooking the dal is quick and hassle free, it makes the dal sticky despite roasting it before hand.

So I would strongly suggest that you cook the roasted dal in an open pan for it to taste delicious.
