Chipped chopped ham or chipped ham is a processed ham luncheon meat made from chopped ham. Chopped ham is a mixture of ham chunks and trimmings and seasonings, ground together and then packaged into loaves.
Chipped chopped ham was created by a Pittsburgh-based brand called Isaly's (pronounced "EYE-zlees"). During its heyday from the 1930s to the 1980s, Isaly's Dairy Stores were all over Western Pennsylvania and Ohio.
Basically, chipped ham is chopped ham that's been cut into very thin slices. You can also ask for very thinly shaved ham if your deli doesn't know what you're talking about when you ask for it chipped. To make a chipped chopped ham barbecue sandwich, you'll need some chipped chopped ham or shaved chopped ham.
This style of ham is so popular in western Pennsylvania, Ohio, and West Virginia that most deli counters there will have chopped ham already chipped up for customers.
It features ham from a processed, pressed, shape loaf called “Chopped Ham.” That ham is “chipped,” or shaved translucently thin, to the point where it begins to shred. The product is sold as “chipped chopped ham” or sometimes referred to by locals as “chip chop” ham.
In short? Once you open a package of ham, or if it comes open — like if it was sliced at the deli counter— you can safely eat your leftovers for up to five days.
Isaly's started in the early 1900s as a family-owned dairy store in Monroe County, Ohio, and by the 1970s, it had stores from Pennsylvania to Iowa. Its signature ice-cream product was the Klondike bar, but chipped ham became its most popular product.
Isaly's Nation exists here in Pittsburgh and around the country. People who've moved away from Isaly's Nation make a point of taking Isaly's Chipped Chopped Ham back to their new hometowns. Pittsburgh Steeler Clubs around the country have Isaly's Chipped Chopped Ham shipped in for big games.
Ham. The back leg of the hog is where we get fresh, smoked, or cured hams. Serrano ham and prosciutto are made from hams that are cured, smoked, and then air-dried. Fresh hams are usually roasted, but they can be cut into ham steaks as well.
Wet-cured hams are brined, which involves the immersion of the meat in a brine, sometimes with other ingredients such as sugar also added for flavour. The meat is typically kept in the brine for around 3 to 14 days. Wet curing also has the effect of increasing volume and weight of the finished product, by about 4%.
That means for a 10-person Easter dinner, you'll need a bone-in ham that weighs between 7.5-10 pounds or a 5-pound boneless ham. If you're serving country ham, though, you'll need way less of it. Although it is delicious, the saltiness will prevent people from heaping it on their plates.
