"Now that's a Crunchy Pickle!"… sometimes you just need a pickle to satisfy that craving for crunchy. As a WW lifetime member, there has always been a jar of dill pickles in my refrigerator for that very reason.

Studies show the simple act of chewing can reduce your calorie intake. How satisfying is it to savor the texture and crunch of a pickle?

Although Cleopatra loved pickles, the canned pickle (and other vegetables) that we all know and love has been around since the late 1800s. That's when John Mason developed the first glass Mason jar able to tolerate the high temperatures used in canning and processing pickles.

Since I spend my days developing delectable recipes for microwave cooking, I developed a "hack" for making those healthy little green, mouth-puckering, salty snacks. Yes, canned pickles made using the microwave with little time and mess!

I’m all about "Quick 'N Delish," which is the name of my online cookbook. I developed 2 recipes for pickles; sweet bread & butter and crispy dill.

How Many Calories and WW Points in Microwave Dill Pickles?

Today it's all about the "dill pickle." They are low in fat and calories, and are a good source of vitamins and minerals. They add spice to leafy green salads, sandwiches, and give a flavor boost to meals.

According to my calculations, each ¼-cup serving has 5 calories and:

DIY Dill Pickle Ingredients

Cucumbers: The main ingredient is baby or Persian cucumbers, which are smaller in size, and have wrinkles on the skin. They typically come 7 to 8 per package and are cut as "sliced coins." We all know cucumbers as vegetables; however, they are in the same fruit family as pumpkins and watermelons. They contain small amounts of vitamin A and K, and are a great source of beta-carotene and are about 95% water.

Chopped Fresh Dill: provides the zesty, tangy flavor and wonderful aroma. It has culinary and medicinal uses. The herb is a good source of vitamin C, manganese, and vitamin A.

Spices and apple cider vinegar

Apple Cider Vinegar: mixed with water makes the tart sour-flavored juice. Evidence suggest it has various healthful properties as an antioxidant, and may lower blood sugar levels.

Mustard Seeds: are used as a flavoring agent and preservative. Rich in nutrients and amino acid, which has antioxidant properties.

Turmeric: is a powerful spice with an impressive list of uses and benefits. It's known for its antioxidant content and ability to work as an anti-inflammatory. This common culinary spice is prized in many cuisines around the world and with good reason.

Minced Garlic: is an impressive flavorful and aromatic spice. Containing countless vital nutrients, garlic has been proven to provide unbelievable health benefits. Adding this to the recipe helps to intensify the flavor.

Red Pepper flakes or powder: an option for a little "kick."

DIY Dill Pickle Kitchen Tools

As the inventor of the Cuchina Safe glass vented microwave lid, no plastics are allowed in my microwave! You will need two large “go-to” glass cooking bowls, one Cuchina Safe lid, and 2-3 canning jars (affiliate link). See the recipe below.

Why use the microwave for pickles?

Several reasons…no pots, no boiling, and shorter cooking time. It speeds the absorption of the pickling brine into the cucumber. Less cooking time for the cucumber means crunchier pickles. Crispy Microwave Dill Pickles

Ingredients

  • 4 cups thinly sliced persian cucumbers (about 7-8 cucumbers)
  • 1-½ cups water
  • ¾ cup apple cider vinegar
  • 6-8 sprigs fresh dill, chopped
  • 2 teaspoons salt
  • 1 teaspoon mustard seed
  • ½ teaspoon minced garlic
  • ¼ teaspoon ground turmeric
  • pinch red pepper flakes, optional

Instructions

  • In a microwave (affiliate link)-safe glass bowl, add water, vinegar, salt and spices. Stir to mix well. Cover with cuchina safe glass vented lid (affiliate link) and microwave (affiliate link) on high for 3 minutes. Remove and let sit for 2 minutes covered.

  • In a large microwave safe bowl (affiliate link) combine cucumber slices and dill. Carefully pour the hot vinegar mixture over the cucumbers and dill. Mix well. Cover and microwave (affiliate link) on high until the cucumber slices are crisp tender, about 4 minutes.

  • Let mixture sit until warm then transfer to sterile canning jars (affiliate link). Seal and chill in the refrigerator overnight.

  • Store your crisp and delicious dill pickles in the fridge for up to two months, if they last that long.
