One of the best parts about serving a whole baked Ham at your holiday table is the guarantee that you will most definitely have leftovers!

This year at Thanksgiving, we are planning on having both maple glazed ham and my foolproof roasted turkey!

Since I know I am for sure making my Mom’s famous leftover turkey barley soup with the turkey carcass, I thought why not get creative with the ham instead of the usual soup or egg dish?

The other day, we baked way too many sweet potatoes (cook once, eat twice right!?).

I opened the fridge to see what I could throw together for dinner and it hit me – stuffed sweet potatoes with the leftover ham, some greens, and of course, melted cheese to bring it all together!

I tested this recipe with and without the spinach and I am happy to report that while it works both ways, it’s way better WITH the spinach, the kids think it’s herbs and you get a boost of baby greens.

Stuffed Sweet Potatoes Ingredients:

  • Sweet Potatoes
  • Olive Oil
  • Baby Spinach
  • Spices (Salt, Pepper, Garlic Powder)
  • Leftover Ham
  • Shredded Cheese

How to Make Stuffed Sweet Potatoes:

  1. Bake the sweet potatoes. This can be done in advance (up to a couple of days) or right before you want to prepare the dish. If you have an electric pressure cooker, you can make Instant Pot Sweet Potatoes to save time.
  2. Prepare your filling. This filling uses leftover (already cooked) ham, baby spinach, and melted cheese so it comes together very quickly once the potatoes are cooked!
  3. Transfer the stuffed sweet potatoes to the oven. Bake until cheese is melted and just golden. That’s it!

Recipe Tips:

  • You can bake the sweet potatoes in advance (up to 3 days) to save time.
  • You can also freeze these stuffed sweet potatoes (once stuffed) prior to baking and bake from frozen for 60 to 75 minutes at 350.
  • I recommend buying a bag of pre-cleaned baby spinach to save time.
  • If you are a fan of swiss cheese, that is an excellent substitution for the mixed shredded cheese.

  • 2teaspoonsextra virgin olive oil
  • 8ouncesbaby spinachchopped
  • 1/2teaspoonsalt
  • 1/4teaspoonfreshly ground black pepper
  • 1/4teaspoongarlic powder
  • 1/2poundleftover hamcut into 1/4" cubes
  • 8ouncesshredded cheese blend (mozzarella, Monterrey jack, cheddar)divided

Instructions

Sweet Potatoes:

  1. Begin by preheating the oven to 350F. Clean potatoes and poke each several times with a fork.

Place potatoes on a lined baking sheet and bake on center rack for 45 to 50 minutes until tender (they don't have to be 100% cooked at this point as you will continue baking them later but tender enough to cut and scoop out most of the insides).

NOTE: This step can be done in advance (up to 3 days).

Stuffing:

  1. While potatoes are cooking, cut the leftover ham into 1/4" cubes and chop baby spinach.

  2. Heat a large skillet over medium heat. Once hot, add olive oil and then chopped spinach.

  3. Add salt, pepper and garlic powder and saute spinach 3 to 4 minutes, until wilted. Drain excess liquid and transfer to a mixing bowl.Add chopped ham and 4 ounces of the shredded cheese (save the other 4 ounces for the topping!). Set aside until sweet potatoes are cooked and ready to be scooped out.

  4. Remove cooked sweet potatoes from oven (leave oven on) and use a paring knife to cut an oval on the top about 3/4 of the way deep into the potato, essentially making a "potato boat" or shell to be stuffed.

  5. Transfer the cooked potato insdies (scooped out of each potato) to the bowl with the ham, cheese and cooked spinach.

  6. Mix filling well and stuff 1/4 of filling into each potato "shell", packing tightly.

  7. Top each stuffed potato with 1 ounce of the leftover shredded cheese mixture and place back into the oven for 20 minutes or until filling is heated through and cheese is melted. If desired, broil for the last 2 to 3 minutes to brown cheese. Remove, allow to cool for 3 to 4 minutes, serve and Enjoy!

NOTES:

  • You can bake the sweet potatoes in advance (up to 3 days) to save time.
  • You can also freeze these stuffed sweet potatoes (once stuffed) prior to baking and bake from frozen for 60 to 75 minutes at 350.
  • I recommend buying a bag of pre-cleaned baby spinach to save time.

FAQs

Why do you soak sweet potatoes before baking? ›

The theory is that soaking draws out starch from inside the potatoes, helping them crisp up. I've tested soaking sweet potato fries many times, and I've found that it doesn't make them much crispier, if at all.

Should you poke holes in sweet potatoes before baking? ›

Do you have to poke holes in sweet potatoes before baking? Typically holes are poked into a sweet potato to prevent a potato exploding in your oven. However, the chance of that happening is low, and according to Lifehacker, sweet potatoes will retain more flavor if you don't poke them.

What do stuffed sweet potatoes contain? ›

Make the filling: In a medium-small bowl, mix together the quinoa, spinach, feta, red onion, olive oil, lemon juice, garlic, salt, and pepper. Adjust seasonings to taste. (I like to slightly over-season my filling so that it's flavorful amongst the whole potato.) Chill until ready to use.

How do you make Ina Garten mashed sweet potatoes? ›

Place the sweet potato meat into the bowl of an electric mixer fitted with a paddle attachment and add the orange juice, cream, butter, brown sugar, nutmeg, cinnamon, salt, and pepper. Mix together until combined but not smooth and transfer to a baking dish. Bake the potatoes for 20 to 30 minutes, until heated through.

Why do you put oil on sweet potatoes before baking? ›

If I'm planning to, I rub the sweet potatoes in a small amount of olive oil before baking to crisp them up and add extra flavor. After baking, let the potatoes cool slightly, split the tops open, and dot with butter that will melt from the residual heat. Season with a little salt and pepper, and you're ready to go.

Is it better to peel sweet potatoes before or after boiling? ›

There is not much difference between boiling sweet potatoes with the skins on versus peeling them, but you will get a boost of fiber and potassium if you keep the skin on. The skin also adds a subtle texture to each bite. If you're looking for a smoother mash, peel the potatoes first before boiling.

Should you wrap sweet potatoes in foil before baking? ›

Wrapping the sweet potatoes in foil ensures that they don't dry out too quickly, and allows you to add aromatics if desired. Unwrapping the sweet potatoes and increasing the oven temperature produces charred, roasted flavors and caramelizes converted sugars.

What temperature is a baked sweet potato done at? ›

If you'd like a more precise indicator, insert an instant-read thermometer into the thickest part of the sweet potato. The internal temperature of a cooked sweet potato should read between 205- and 212-degrees Fahrenheit.

Can you overcook sweet potatoes? ›

Unfortunately, yes! If your sweet potatoes cook too long in the oven they can overbake and become dry. The insides will become mushy. Moving your sweet potato cubes around and checking them periodically can help avoid overcooking.

What is in Cracker Barrel loaded sweet potato? ›

#20 Loaded Baked Sweet Potato

When we say loaded, we mean it! We top our soft baked sweet potato with Brown Sugar Cinnamon Butter, a toasted Marshmallow, Butter Pecan Syrup, and Candied Pecans. Try it with our Maple Bacon Chicken or Grilled Sirloin Steak for an amazing flavor combination.

Why do people put marshmallows in sweet potatoes? ›

Despite what your grandmother says, this cloying side dish didn't originate as a family recipe. It was concocted by Big Marshmallow as a way to push the candy on Americans. Though the tubers are high in sugar to begin with, there's historical precedent for treating sweet potatoes like dessert.

Why do you need to soak sweet potatoes before cooking? ›

TIPS & TRICKS to Make this Recipe: The main secrets to achieving that incredible crispy texture, is to soak the cut sweet potatoes in cold water for at least 30 minutes. This helps remove the starch from the sweet potatoes so they´re not limp & soggy.

Why not to boil sweet potatoes? ›

Bake, don't boil

It intensifies their flavor and creates a richer taste compared to boiling, which can result in a watered-down, bland flavor. As the oven temperature rises (when baking), the molecular structure of the sugar molecules in the sweet potatoes begins to change.

How do you make Patti Labelle sweet potatoes? ›

Boil the sweet potatoes in a large stockpot until soft, about 25 minutes; drain. When cool enough to handle, peel the potatoes and transfer them to a large bowl. While the potatoes are still warm, add the butter, cream, agave, cinnamon and salt, and mash until smooth. Sprinkle with the orange zest.

Should I put sweet potatoes in water before baking? ›

Give them a cold water bath: Once your fries are chopped, toss them into a large bowl. Then cover the fries completely with cold water and let them soak for at least 30 minutes (or up to overnight). This will help to rinse off the excess starch and help the potatoes crisp up beautifully in the oven.

What's the point of soaking potatoes before cooking? ›

Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.

Should you soak potatoes in salt or sugar water? ›

The best potatoes for French fries are soaked in a sugar solution before frying. The sugar solution has something to do with the carbohydrates and prevents the potatoes from soaking up a lot of grease, so they get crunchy.

How do you soak sweet potatoes to remove starch? ›

To remove excess starch, place cut sweet potatoes into cold water making sure the cut surfaces are submerged. This step is especially recommended for "kinton" (Japanese-style mashed sweet potato) and other lightly seasoned dishes where a delectable color is desired. Soaking time of about 5 minutes is sufficient.
