Flour

Vital to the structure of your mincemeat shortbread, plain flour will help bring the shortbread dough together and when you flour your surface it will help stop the dough from sticking when you roll it out.

Butter

Unsalted butter is the best thing for this mincemeat shortbread recipe. Mixing the butter with the flour is what brings the dough together. Don’t forget to get your butter out of the fridge nice and early so its soft.

Sugar

Caster sugar is what you need for this recipe, it’s finer than granulated so won’t leave your bakes with a gritty texture. If you are out of caster sugar, granulated will work fine for mincemeat slices.

Versions containing animal fats should be cooked before use but those including butter can be used as they are, perhaps stirred into an ice cream mixture. You could even serve an especially tasty version with whipped or clotted cream as a sumptuous festive topping for warm scones.

How long can you keep mincemeat in a jar without? ›

The containers you use must be scrupulously clean, so I like to use jars straight out of the dishwasher or I sterilise them in the oven. If you store it in a cool dark place the mincemeat will last for up to 1 year unopened. Once open store in the refrigerator and use within 3=4 months.

What happens if you don't chill shortbread before baking? ›

But in this shortbread cookie recipe, it really makes a difference. Chilling the dough helps the cookies hold their shape. If you don't chill your shortbread dough, the cookies will spread as they bake.

What happens if you put too much butter in shortbread? ›

Greasy mess: Extra butter means more fat, making the dough greasy and difficult to handle. Spreading like crazy: Cookies lose their shape, spreading thin and flat instead of staying nice and round. Uneven baking: The excess fat can burn easily on the edges while leaving the center undercooked.

Should you chill shortbread dough before rolling? ›

Use your hands to form the dough into a flat disc, then wrap in plastic wrap and place in the fridge to chill for at least an hour. Roll the dough out onto a lightly floured surface until it is ⅛-¼” thick.

Why do you put an egg in shortbread? ›

Adding hard-boiled egg yolks to a basic shortbread recipe makes cookies more tender with the perfect buttery-soft texture. The addition is a sure-fire way to improve the texture of your cookies, but perhaps not always worth the extra time and effort.

Should butter be cold for shortbread? ›

Should butter be cold or room temperature for making shortbread? Always start with cold butter straight from the refrigerator. This will keep the dough from warming up, making it greasy and difficult to roll out.

Mincemeat isn't difficult to make, but it has a lot of ingredients, which can make it expensive to produce in small batches, and it requires at least a day's advance planning to let the ingredients sit.

Why do you stir mincemeat clockwise? ›

Traditions, folklore and superstitions

Stirring the mincemeat was quite an event, and English tradition dictates that it should only be stirred clockwise. Stirring the mincemeat anti-clockwise would lead to bad luck and poor fortune in the coming 12 months.

Why does mincemeat go brown? ›

Oxygen exposure changes meat colour

When myoglobin comes in contact with oxygen, it forms oxymyoglobin, which has the bright, red colour of beef. After several hours or days of exposure, the oxymoyoglobin can convert to metmyoglobin, which has a brown-grey colour.

Can you use year old mincemeat? ›

Yes. I'd use that. Mincemeat has a very long shelf life, far longer than that printed on the container, (which is only a short while ago). I'd add a slug of brandy or whiskey to perk it up a bit!

What is in a jar of ready to use mincemeat? ›

Ingredients: Water, Corn Syrup, Raisins, Dried Apples, Molasses, Corn Starch Modified, Distilled Vinegar, Dried Orange And Lemon Peel, Salt, Spices, Beef, Fruit Pectin, Natural Flavor.

Can you eat mincemeat straight from the jar? ›

Mincemeat is traditionally cooked then cooled whilst stirring so it should be fine to eat "raw". A good one will have lashings of brandy in too so that should kill any nasties.

What happens if you don't poke holes in shortbread? ›

Piercing the shortbread with a fork is not only for decoration, but it's meant for more even baking. Poking holes in the shortbread allows the heat to penetrate the cookie, hence more even baking. Notice I'm using powdered sugar here. You'll see lots of shortbread recipes using granulated sugar.

Should the butter be cold when making shortbread? ›

If it's too warm, the butter and sugar cannot properly cream and the cookies will taste dense. Many shortbread recipes call for cold butter worked into the dry ingredients and that gives you a wonderfully flaky cookie but if not mixed properly, the results can be inconsistent.

How can you tell if shortbread is underbaked? ›

Begin checking at the tail end of the cooking time. Undercooked shortbread will be doughy and chewy. Slightly overcooked and it will become chalky, brittle and hard.

Why is my shortbread raw in the middle? ›

There are a variety of reasons why the shortbread could be damp underneath but it is most likely that either the dough is being pressed out too thickly, the pan is not metal so heats up too slowly, or the oven temperature is too high causing the top to brown before the bottom has cooked sufficiently.
